Inactive yeast is inert yeast or inactivated yeast, which is inactivated by heating or pH changes. At the same time, the endogenous enzymes of the yeast autolyse without adding any antibiotics. Inactive yeast contains cell walls, zymosan (especially glycoproteins such as mannoproteins), minerals, trace elements, sterols, unsaturated fatty acids, glutathione, etc. Inactive yeasts have good effects in the activation of active dry yeast, alcoholic fermentation, malolactic fermentation and later aging of wine.
Inactive edible yeast is a nutrient-rich food supplement made from cultured, inactivated and dried Saccharomyces cerevisiae. Unlike active yeast, this yeast powder does not trigger fermentation reactions and retains certain nutritional value and flavor properties, so it is a green and safe food that does not irritate the gastrointestinal tract.
